Mulato chillies are a darker, sweeter, softer cousin of ancho chillies. Mulatos (along with Ancho and Guajillo chillies) are part of the triumvirate of chillies that are used to make mole powder and other Mexican sauces. The Mulato has been described as tasting somewhat like chocolate with undertones of cherry.
