We now cook our charcoal in kilns so we can offer fully carbonized Australian charcoal unlike before in the old pit cooking system.

Gidgee provides unmatched heat output, consistency as well as a long lasting burn. Although more expensive, we've found that we use a lot less of this charcoal to achieve similar results compared to other charcoals. The smell and flavour of this charcoal is also exceptional.
